Roasted Curry Cauliflower

Roasted Curry Cauliflower is one of my favorite vegetable side dishes.  It's so quick and easy to make and the taste is scrumptious!  There are times when I make this and nearly eat the whole head of cauliflower by myself.  It make a good side dish or snack even.

Roasted Curry Cauliflower

Heat oven to 425 degrees

Ingredients:

1 head cauliflower (cleaned and broken into florets)
3 tablespoons extra virgin olive oil
1 teaspoon curry powder
1/2 - 1 teaspoon kosher salt

Place cauliflower florets in a large bowl.  Add the olive oil.  Sprinkle with curry powder and kosher salt.  Toss to coat.

Tossed and ready for oven


Place seasoned cauliflower on baking sheet.  Bake for approximately 20 minutes or until cauliflower is golden and a fork can easily be inserted.  Don't over bake as the cauliflower may get too soft and mushy.
